Week of Recipes, Day # 3

Week of Recipes 
Day # 3.

Sesame Noodles

I got this from the lovely Pioneer Woman, that lady is so amazing, and I bet hers tastes better than mine, everything she touches turns to gold pretty much. But I made it tonight and I loved it and so did my hubs Jeremy.


1/4 cup soy sauce
3-4 cloves garlic, minced
3 Tbsp sugar
2 Tbsp rice wine vinegar
2-3 Tbsp sesame oil
1/2 tsp hot chili oil
4-5 Tbsp canola oil
1 pound spaghetti, cooked
Green onions, chopped
Combine the first 7 ingredients together in a small bowl and whisk until thoroughly combined. Pour sauce over warm, cooked noodles and top with chopped green onions.



Lemon chicken

I like this chicken. I just kind of created it. Its really good. Its fast and doesn't require hardly any ingredients, its my back up when we have no food in the house pretty much. My little sister who is the pickiest person ever (really, the kid hates angel hair pasta but loves spaghetti noodles?? They taste the exact same!) but anyway, my sister loves this recipe, so I figure if she likes it, it is kid approved.


2 Chicken Breasts. (I butterfly my breasts to make them pretty thin which makes four breasts after I butterfly them  )
1 1/2 C Bread crumbs
2 eggs
2 Tbsp  Lemon Juice
Cooking spray
Put bread crumbs in a shallow bowl or dish, place eggs in a shallow bowl or dish as well and stir fast with a fork or whisk to make an egg wash.   Place chicken in egg wash and cover with egg completely. Then place the chicken in the bread crumbs and cover chicken completely. Spray a glass pan with cooking spray. Then spray both sides of each chicken breast with cooking spray this makes it a little bit crispy. Pour lemon juice over the chicken. Bake at 375. Since I make my chicken really thin since I don't like thick pieces of chicken. So it takes my chicken about twenty minutes to cook. But if you have thicker pieces it takes them probably around thirty minutes.
I also like my chicken a little crispier, which the oven just does not do, so after the chicken is done I quickly crisp the chicken. I just get a pan out and pour some olive oil in the pan, and turn the burner on to like Medium high, pour in about 1 tbsp olive oil and then get it hot, when its hot, stick the chicken on and let it sit there for about 1 minute turning over and cooking the other side when its a little browned. This is just optional, cooking it just in the oven is tasty too.

Week of Recipes day 2, Salsa

Week of Recipes Day #2

Fresh and Fast Salsa

So I just made this recipe up the other day. I really like chips and salsa, it is soo good. But I usually do not eat like the canned store bought salsa, there is something about it that is just like soggy or something. I don't like it, and since I can't get into this chips and queso fad that everyone loves because of my hatred of all things cheesy, that leaves me to make my own salsa.
In the summer I made a ton of fresh salsa and it was awesome, but the other day I made it and the tomatos sucked! Like I said in my last post, tomatoes this time of year are just gross. I love me some tomatoes, I eat  the things plain, but not when they are out of season. So the other day I bought a can of Rotel.
I am sure most of you have used it before, its just diced canned tomatoes.
But I bought a few cans and came up with a non gross tomato recipe that tastes pretty fresh!
Except I bought this hot kind, cause I didn't want mild and I couldn't find medium, the hot kind burned my poor little taste buds, so I would suggest going with mild or that lime kind shown above.

1 can (13 oz) Rotel tomatoes
1/4 (approx) of an onion
1 jalepeno pepper (if you use the hot kind, this is way unnecessary!)
1/4 cup (approx) Fresh cilantro
1 Tbsp lime juice
1 tsp garlic
Dash of Salt

First chop up your onions and cilantro and jalepeno pepper, I use my food processor and it is done in an instant (love that baby!) Pour mostly drained can of rotel in bowl, stir in chopped onion, jalepenos and cilantro. Add lime juice, garlic and salt. Stir and enjoy with chips.

I use this same recipe for fresh tomatoes too, just substitute about two med. tomatoes.

So this recipe isn't set in stone, I always just add whatever I feel like, this is just what I added together today and used. Salsa is way fun to make, last year I canned a bunch of it too which is also yummy. Play around with it until you get it to the oniony spicy ness of your choice. I really like fresh salsa though cause like the onions and stuff are so fresh, even when using the canned tomatoes it still tastes pretty fresh if the rest of the ingredients are.


Today's recipe was a quick one, but sometimes those are the best! I do have some fun ones prepared, but they might be mixed in with other quick ones as well cause I do not make dinner every single night, usually every other night....

Also how do the bowls look? After last night I decided I had to get a couple bowls to make the stuff look more presentable. I got these at good old Dollar Tree. Gotta love that store!

Week of Recipes Day 1, Thai Food

Week of Recipes Day #1
Thai style coconut chicken.

This is a super yummy recipe I got from my lovely Betty Crocker cookbook. That Betty really knows what she is doing, cause I love all of her recipes.

Thai Style Coconut Chicken

1 Tbsp Vegetable Oil
1 lb boneless skinless chicken breasts, cut into bite-size pieces
1 tsp grated lime peel
1 tsp grated ginger root
1 clove garlic finely chopped
2 Fresh Serrano chiles or 1 jalapeno chili, seeded and finely chopped
1/4 c. finely chopped fresh cilantro
1 can (about 14 oz. ) coconut milk
1/2 tsp salt
1 tsp brown sugar
1 Tbsp soy sauce
1 C. sugar snap pea pods
1 medium green bell pepper cut into 1 inch cubes
1 medium tomato, chopped.
1 Tbsp chopped Fresh basil leaves
Hot cooked white or Jasmine rice.

In nonstick wok or skillet heat oil over high heat. Add chicken; stir fry 2-3 minutes until chicken is no longer pink in the center. Add lime peal, ginger root, garlic, chiles and cilantro; stir fry 1 minute.
Pour coconut milk over chicken. Stir in brown sugar, salt, soy sauce, pea pods and bell pepper. Reduce heat to medium. simmer uncovered 3-5 minutes, stirring occasionally until veggies are crisp-tender. Stir in tomato.
Spoon into shallow serving bowls over rice. Top with Basil.


So first I start to cook my rice. I use my rice cooker. It is the best! I love it.

I know the recipe called for peas, peppers, and tomatoes,
but I don't like peas and I forgot to buy jalapenos so I used the cilantro, the bell peppers and I used crushed and dried red pepper flakes to give it a tiny kick. I have made this recipe before with the jalapeno and it tasted pretty similar using the red pepper flakes. Also I like it better without the tomatoes, plus tomatoes are totally gross this time of year, I love tomatoes but its so hard to find descent ones in the winter so I left those out as well.
I also didn't have lime peel so I just put in lime juice, about 2 Tbsp actually, more than it calls for, and I loved it that way. It really added some nice flavor to it, so the more lime juice the better I say. And my hubby also liked the addition of the lime juice.

Coconut Milk may sound weird if you haven't used it before, but its in actually quite a few dishes and I really like it. I will be making another recipe later this week with it actually. But its usually found in the Asian foods part of the grocery store. Stir it up after you open the can before you pour it in.

Here is it while its simmering. Since there are only two of us, I didn't put in a ton of chicken and peppers.
Usually I don't like sauces this creamy color, they usually have like sour cream or cream of chicken soup or something, which I can't eat. But this is way different. Its kinda sweet and not like milky (well its coconut milky but not cow's milk-milky. )

What I love....

Today I was/am having a grumpy day. It is Monday, and I had to work, and my work has been way frusterating today! Then I got a migraine and I am trying to eat healthy so I had to eat a grapefruit for breakfast instead of sugary ceral and I couldn't eat any chocolate today. AND my house is a total mess and I literally have five loads of laundry to fold. Today was not my day. 
So sometimes it helps to think of things I love. I went around and took pictures of all the things that I love. I guess I could have got some of them online and they would have been better pics and you wouldn't see my messy home in the background, but that would have defeated the purpose of making me happy.

Pop! Pop! Pop!

Look what I got....
A brand new popcorn popper! 
This is a gift from my mom for Christmas.
I had one before that, that my mom had actually given me for a wedding shower present.
See I really love popcorn, but not so much the microwave stuff, mostly the homemade kind.
And I make it a lot!
So on Halloween when my husband and I went to sit down and have serial killer documentary night (yes that is how we spent our Halloween, and no, I am not creepy) I wanted to pop some popcorn to make this really yummy popcorn recipe that my mom makes (which I will get to later) my popcorn machine broke. It made this really loud noise and wouldn't pop the kernals, it just burnt the kernals. Well I was not pleased, not pleased at all. I really wanted that popcorn cause it was going to be a tradition that I made it every Halloween. I even tried popping popcorn on the stove, which I didn't even know how to do, and that ended not so well. So I eventually, after like an hour, gave up. But only after a lot of grumbling... And I could have bought another popcorn popper another night, I just didn't feel like buying another popper.
But my lovely mom bought me another one, hooray. Thanks mom!
Last night I took it out and finally got to have some homemade popcorn goodness.

Here is my mom's delicious marshmallow popcorn recipe that I talked about above. I didn't make it last night, I wanted something salty, not sweet. Plus I have way too many sweets in my house already. So the above pics are just regular butter popcorn. But this recipe is super duper fabulous and easy. I usually don't like sweet popcorn, kettle corn, that stuff is sick! But this kind I really love. My hubby ate it a few years ago for the first time and I swear he talked about it for a year...

Mom's Marshmallow Popcorn
1 cup unpopped popcorn kernels
3 c. mini marshmallows
1 c. salted peanuts
1 c. melted butter
1 c. sugar
1 /2 c. karo light corn syrup

In a sauce pan melt butter, sugar, and karo syrup, simmer 3 minutes stirring constantly. In the mean time pop the popcorn kernals and place popped corn in large bowl. Pour the melted sugar/syrup mix all over the popcorn, stir in peanuts and mini marshmallows.
My mom usually makes this on Halloween, so she puts in a Halloween candy mix. With  like candy corn and those pumpkins and stuff in it. Its really good that way. You could put like jelly beans or any candy you wish really.

Clock = Chalkboard

So I had this clock that we got for our wedding and it was super cute and I loved it. But we have always had problems with it keeping time. At first it just went through batteries super super quickly. But then about six months ago it wouldn't tell time at all, it was always off. The second hand would still move and so would the other hands, but it just wouldn't keep real time. It was super annoying. But it was cute so I kept it up there. But for Christmas my father-in law gave us a new clock, hooray! So I hung it up where the old one had been. But I still thought this clock was cute, so I wanted to keep it...

So I had this great plan to put scrapbooking paper over it and then put some vinyl words on it.
But the vinyl lettering I had didn't fit. And I dont have a cricuit or silhouette so I couldn't just make one that fit.... So I moved to plan B.
I still had a ton of Chalkboard paint left over from all my old Christmas projects so I took that out and painted the glass with the chalkboard paint.

I took off the outer parts of course, I am sloppy and totally would have got paint all over it.

Yes, that is wrapping paper under it. I didnt have any newspaper and I had to put something down. And I had all these smaller scraps of wrapping paper that was there, it worked.


Voila! The finished product. It looks pretty good. I wrote a bit crooked, I have a hard time writing straight, so it makes the clock look crooked, but its not. But not its a cute sayings chalkboard.
I might make it a menu board and put it in my kitchen, I haven't decided yet...
